Diabetic Bake ShopTM, A Personal Story

Diabetic Bake ShopTM was created from something deeply personal and deeply collaborative.

Dr. Mark Harrison is not only a South Texas physician, he is also living with Type 2 diabetes. Like many people managing diabetes, he understands the constant balancing act, reading labels, counting carbs, saying no, and watching others enjoy desserts that are off limits. He has felt that frustration himself.

But this bakery was not built by medicine alone.

Ashley Sepulveda is the other half of Diabetic Bake ShopTM. An experienced baker with six years of senior care experience, Ashley has worked closely with diabetic individuals and understands not only their dietary restrictions, but the emotional weight that comes with them. She has seen the disappointment when dessert is removed from the table. She has seen how limited options affect quality of life.

Dr. Harrison brought the medical discipline.

Ashley brought the craft, creativity, and heart.

Together, they saw the same problem from two different angles. Patients and seniors felt deprived. Many sugar free desserts still caused high blood sugar spikes. Others were packed with hidden fillers and high carbohydrates that did not align with true diabetic needs.

There had to be a better way.
